Summer Recipe Series | Salad

This summer I'm sharing some of my favorite recipes including this tasty rainbow veggie salad.

I originally found this recipe from paleorunningmama.com and I'm so thankful! It has the perfect blend of flavor and health and makes for a delightful summer treat.


With 13 common ingredients, it's quick to whip up!


Ingredients

  • 2 cups Brussels sprouts

  • 1/3 cup Cherries, dried tart

  • 3 cups Kale

  • 2 cups Red cabbage

  • 2 cups Sweet potatoes

  • 2 tsp Date paste

  • 2 1/2 tbsp Lemon juice

  • 1 tsp Mustard, stone ground

  • 1/8 tsp Black pepper

  • 1/8 tsp Sea salt

  • 2 tbsp Olive oil

  • 1/3 cup Olive oil, light flavored

  • 3/4 cups Cashews
